As for now I leave you with a great idea of a week of chicken dinners for under $40.
It all starts with buying a whole chicken (I got on clearance for $7).
Boil the chicken and any vegetable scraps you may have. You want a ton of broth so you may need to add a bit of chicken bouillion to it to get a good flavor. When the chicken is cooked, take it out and pick those bones clean. From the chicken meat and broth you can make a week of dinners to feed 2 adults and 2 kids for a week. Here is how you stretch it out…
1 cup of meat and 4 cups of broth for Chicken Noodle Soup, with carrots and celery (serves 4)
1 cup of meat and 10 cups of broth for Chicken ‘n’ Dumplings/Noodles/Slicks (serves 10)
1/2 cup of meat for Chicken Enchiladas with Rice, Corn, and Black Beans (serves 10)
1/2 cup meat for Chicken Fried Rice, with Vegetables (serves 4)
Any left over meat can go for chicken salad for lunch! (I had enough for 2 good sized chicken salad sandwiches.)
